Use a VPN.
Go to settings -> (Network) Connections
Look for "Local IPv4 address or interface" and "Local IPv6 address or interface".
Click the three dots and choose your VPN interface.
When you do this, no traffic will leak if your VPN gets disconnected.
Also, if you want to stop/start all torrents at certain times you can use Tixati's scheduler.
